Sweet Potato Pie

Though pumpkin pie has its ardent admirers in the South, it does perhaps play second to the first of sweet potato pie, than which there is hardly anything better. Here is a fine recipe.

3 large cooked sweet potatoes
2 eggs, separated
1/3 cup brown sugar
1/2 teaspoon vanilla
1/4 ground cinnamon
1/2 teaspoon salt
2 tablespoons melted butter
6 tablespoons granulated sugar
1 9-inch unbaked pastry shell

Peel potatoes and mash until soft and creamy. Add egg yolks, sugar, vanilla, cinnamon, salt and melted butter. Mix well and spread about an inch deep in pastry. Bake in a hot oven (425 degrees F.) 25 minutes or until crust in brown.
Making a meringue of egg whites and granulated sugar; spread over top of pie and bake in a very slow oven. (300 degrees F.) until the meringue is brown. This should be served hot.
