Country Club Pumpkin Pie

(Filling for 2 Medium Pies
No. 2 1/2 can Country Club Pumpkin
1 1/2 cups light brown sugar
4 eggs, well beaten
3 tablespoons butter, melted
2 tablespoons dark cooking molasses
1 tablespoon Sudan Pumpkin Pie Spice
1 1/4 teaspoons Country Club Salt
1 1/2 cups rich milk or Country Club Evaporated Milk, diluted
Unbaked pastry made with Country Club Pastry Flour

Line pie tins or pie plates with unbaked pastry. Combine pumpkin, sugar and the remaining ingredients, in the order given. (If desired, use 2 teaspoons Sudan Cinnamon, 3/4 teaspoon Sudan Ginger and 1/2 teaspoon Sudan Nutmeg in place of mixed pie spice). Bake in a hot oven (450F.) for ten minutes. Reduce heat quickly (leave oven door slightly ajar) to 325-350 F. and continue baking for 30 minutes or until filling is firm and has a glossy, golden brown top.
