Makes one 9-inch pie
Vanilla wafers
1 can (14 ounces) sweetened condensed milk
1/8 teaspoon salt
1/4 cup lemon juice
3 medium bananas
1/2 cup heavy cream
1 tablespoon sugar
Cut enough vanilla wafers in half to make 12 unbroken halves. Crush any broken ones and enough more wafers to make 3/4 cup crumbs. Sprinkle crumbs on bottom of buttered 9-inch pie pan. Arrange halves, cut side down, around edge. Mix milk, salt, and lemon juice. Dice 2 bananas into mixture; stir enough to coat bananas. Pour into pie pan. Chill. Just before serving, whip cream, add sugar, and pile lightly around edge of pie. Garnish with remaining banana, sliced.
